I got this recipe out of a Rachel Ray magazine, it's a new favorite in our house! |
Four 4-oz Tilapia fillets
1 teaspoon curry powder
1 teaspoon sweet smoked paprika
Salt and pepper to taste(I did about a teaspoon of each)
1 scallion, finely chopped
Two lemons
Heat a large nonstick skillet with a little olive oil on medium-high heat. Season the tilapia with paprika, curry powder and salt and pepper mixture. Add to the skillet and cook, turning once, until just cooked through. It took about 8 minutes. Top with chopped scallion and drizzle with lemon juice. (I think this would be good on the bbq too)
